Coppa Club is a laid back place to be used for whatever you need, all day, every day and we’re coming soon to Brighton, summer 2019.

About the role:

We are looking for an experienced and qualified Head Chef to lead and organise the kitchen’s activities. You will be the first in command in the facilities and will create and inspect dishes before they arrive at the customers ensuring high quality and contentment.

About You

• Like Coppa Club, you love an early morning sunrise as much as a beautiful sunset.
• You’re a hands-on, sleeves up Head Chef with a passion for preparing and serving outstanding fresh food within a busy, high volume environment.

We ask our Head Chef to

• Oversee day-to-day kitchen operations
• Drive the senior kitchen team and the brigade towards consistently achieving GP
• Ensure employees work productively and develop professionally
• Manage the Kitchen service and maintenance/reporting
• Managing the food across the Restaurant & bar
• Oversee recruitment and training of new members to the Brigade
• Ensuring that the kitchen and the brigade, including KPs, are aware of and living by standards which meet
• Health & Safety requirements.
• Control and direct the food preparation process
• Approve and “polish” dishes before they reach our guests
• Plan orders of equipment or ingredients according to identified shortages through Procure Wizard
• Be fully in charge of hiring, managing and training kitchen staff
• Maintain records of payroll and attendance

We ask our Head Check to have:

• Proven experience working as a Head Chef / Executive Chef within a high volume, fast-paced branded kitchen
• Compliance and financial understanding and control
• Track record of recruiting a strong team & reducing labour turnover
• Coaching and developing your chefs into Head Chefs
• Full knowledge of all hygiene, health and safety practices.
• Experience in consistently achieving GP and report accurate food GP to the General Manager.
• Knowledge of system Fourth Hospitality and Procure Wizard (desired)
• Monitor, control, order of food stock appropriate to sales levels and keep within budgets set for ordering
