Job description

We are recruiting for a Sous Chef  to join the team at The Thurlestone Hotel working in the 2 AA Rosette Trevilder Restaurant.

Live in accommodation is available in our newly opened fully refurbished staff house just 10 minutes walk from the hotel.

About the role

Our 2 AA Rosette Trevilder Restaurant serves breakfast and dinner daily to our hotel residents, offering a locally sourced TDH menu with daily specials. We also offer lunches in the hotels Terrace Bar and poolside Rockpool bistro and afternoon teas in the lounges.

The dining experience is central to our guests at the hotel with covers in the region of 70-100 daily.

As Sous Chef you will have the experience to run your own section and the technical skills to deliver to our high standards. You will be willing to develop the more junior team members, working with the head chef to run the wider kitchen set up.

We have a well established team so are looking for someone who will want to build a future with us, this is not just a seasonal vacancy.


Key Responsibilities

  • Directing the food preparation process and delegating tasks
  • Cooking and preparing high quality dishes
  • Assisting the Head Chef to create menu items, recipes and develop dishes
  • Supervising all kitchen stations
  • Supervising, motivating and working closely with other Chefs of all levels
  • Being responsible for health and safety
  • Being responsible for food hygiene practices 
  • Ensuring food quality and excellent standards are maintained for all dishes created
  • Assisting with determining food inventory needs, stocking and ordering
  • Ensuring the kitchen meets all regulations including sanitary and food safety guidelines
